Watermelon jam


Very sweet confiture made from watermelon rind is ordinary kind of sweets in Georgia.

The process is simply but interesting – firstly must to take white part of watermelon rind, peel out green bark and remains of red watermelon’s part, slice, make several holes with spoon and then immerse in potash or at least Natrium Hydrogencarbonate solution for some hours. After it is started 2nd part of process – confiture making with plenty of sugar, some water and all it in very low oven.

For me personally it is too sweet, but it is very unusual, so must to taste once!
