Georgian bread – Shothi

In Georgian cuisine bread has special place – one of most important parts of meal. Most Georgians does not had enough, if meal was without bread. In addition, most dishes are prepared with plenty of tasty sauce to immerse it with the right kind of bread (it is some general types of).

This bread – Shothispuri has a special baking way in barrel-shaped oven (Tone), which is partly immersed under the floor level. Fresh smile-shaped dough should be sticked to the inner wall of the oven till it is ready baked. After it baker takes bread away with a special hook.

The consistence of Shothispuri is similar to Italian Chiabatta.
